    How long to eat short ribs

    I had some flanken cut beef ribs from Wild Fork I put in water in the fridge to thaw on Monday. Ended up not getting to eat them due to unforeseen consequences. They are still in the original cryovac package. At this point, I don’t see them getting cooked before Friday because of the holiday, possibly Sunday. Either way I’d be getting them in a Korean-style marinade at least 24 hours in advance. Any reason to be concerned about food safety here?

    Should be fine if they've been refrigerated in the cryo. You'll know by the smell, with pork it's pretty obvious. But I have left plenty of ribs in the fridge that long without problems.

      Cripes, I thought you meant pork. Heck, for beef, there's no problem.

    Slow thaw after frozen, If they went into freeze as fresh meat then I see no issues at all. Guessing they didnt even thaw until late yesterday or today.

        Sounds OK to me. I would go for it.
        But I am well supplied with Pepto-Bismol, Rolaids, Tums, and Kaopectate.

            Thanks all. To add to the fun, it now looks like rain here today. I’m not sure what else to do with these besides grill them. I suppose if you braided them they would shred like any short ribs?

              How thick are they? As a whole, Koreans have portable burner tables and grilling plates for indoor use. Again, it depends on how thick the meat is.
