Thanks to all who helped give the the confidence to execute this cook,! I was presented with 17, 1.5 in thick ribeyes that were beautiful and was slightly intimidated as I didn’t want to ruin 300$ worth of steak at a place I just started working.
I ended up using 1 grill with the coals evenly spread as for down from the grates as I could , the other grill screamin hot with coals close to grate as possible. Put all the steaks on the less hot grill putting the people who wanted more medium rare on the top rack. Started probing and flipping and rotating as need , then would sear in the hot grill as necessary to brown up/ bring to proper temp.
