    Short ribs cook time

    Last week I bought some short ribs from creekstone farms. I am guessing they are about 2-3lbs each. I am going to cook two of them. Two packages of 4 ribs. I am wondering how long to cook them for approximately. I figure I will cook them until they hit 203. I am figuring they will take about 6 hours. Is that a good guess?

    In my personal experience they take about 9 or 10. But it could be how I do mine. I smoke at ~250 ish until they hit about 180 then I wrap them tightly in double layer foil (I don't prefer a thick hard bark on them) and take to 200-205, then give them an hour hold once they get there.

      Cooked some from Creekstone a few weeks back....sooo goood

    Mine are 7-8 hrs at 250 usually. Occasionally a little bit longer. Plus a minimum two hour hold after that. I have found that hold time to be essential. No wrap during the cook but wrapped in butcher paper for the hold.
