USDA prime, from Creekstone. Cut from one of those whole primals they were offering in January.


I rubbed it with @Meathead’s Smoked Red Meat Rub, the commercial product. Red Meat Rub is one of my favorite seasoning mixes from Amazing Ribs; I have a little trepidation using the MSRMR, because generally I don’t like smoke flavor on prime rib, but I already spent the $$ so better now than never! Anyhow, I trust Meathead. It’s going to be awesome, I think.

I’m putting this over a 250° fire on the BGE tomorrow around noon, it should be ready by 4. Folks gonna be eating’ beef, hard, so the sides will be really simple: fresh corn from the farmer’s market tomorrow morning, and a garden salad. I’ll post the results in SUWYC.
