    Flank Steak!

    I get all my beef from a local farmer - I'll pick up another 1/4 steer in about a week, this flank steak was the only thing left in the freezer from last year.

    Sunday evening 13 December I made up a puree of fresh onions & garlic, homemade pickled jalepenos, salt & pepper, cayenne powder, some lemon juice, and olive oil. I slathered it all over the steak, placed it in a glass 9x13, covered it with plastic wrap, and stuck it in the fridge.

    I had a super busy week at work, didn't get a chance to grill it. I was a little worried that it had been sitting for almost six days, so I got right on it 1st thing this morning.

    I cleaned off all the puree, rinsed it off, then patted it dry with paper towels. Grilled it fast and super hot - and voila! The BEST flank steak I have ever had! =)

          Yum it sounds good. I like dill on beef. I never do it though. My dad (not a gourmet BBQ person, just a typical dad) keeps telling me I should marinate my steak in dill pickle juice cuz a guy at work told him about it. I can't bring myself to do that though...

          Thanks all for the kind words!

          This morning for breakfast I made a "steak & onion scramble".
          Chopped up an onion and sauteed in butter, chopped up some leftover flank steak and stirred that into the onions when they were cooked, then beat up 6 eggs with a bit of milk and stirred that in.

          I added zero seasoning to the mix - the highly seasoned flank steak bits made the whole thing perfect.
          The wife loved it, so I'm all set for the day - "if Momma ain't happy ain't nobody happy!" =)
