On Sunday I plan on grilling Tuscan spare ribs using the recipe on the site. My wife wants to start cleaning out the freezer and I now have beef ribs instead of pork. Has anyone made Tuscan ribs with beef ribs and if so what adjustments if any were made?

Is this the recipe from the free side where you marinade with Italian dressing and salt? If so, I'd just marinade them and treat them like ordinary beef ribs (with no wood smoke) and mop them occasionally.Last edited by Murdy; August 26, 2022, 10:45 AM.

This is how I do them, usually with pork but also with grass-fed beef and elk. Overall, I prefer pork but the beef and elk were good.

One cannot have too many grills.
Heck, why not? Use Beef. You may want to adjust your seasonings that are more beef friendly. I would replace the sage with a little Italian Seasoning...I would add fresh Basil at the end if you have it. I might use San Marzano tomatoes. I wouldn't worry. Use what you have. It'll be awesome!

Tuscan ribs, most likely with beef, will have to wait until next weekend . We went out last night with friends to a local brewery followed by a not guilt free dinner . My wife's suggestion and I agreed was to eat cleaner and lighter today.
