Cooking some New York strips on Sunday - SNS, reverse sear. Just got my first bag of q-salt and it tastes pretty good! I was planning to dry brine overnight, any downside to using the Q-salt for that or would the flavors get too strong?

Looks like it is basically salt pepper garlic msg, and nitrates. The msg is from the mushrooms, the nitrates are from the celery. If you dry brine with it, you might get a cured layer on the outside that penetrates deeper the longer you let it set.
