      Ditto on gboss 's recommendation. It's the one that Aaron Franklin recommends in his book.

      Franklin is now selling his own version of that same knife, so if you want a little caché with your slicer, you might want the Franklin one for about the same price.

        J-Melt great job on that brisket!

        Here is the slicer I use and love for brisket, bacon, roasts and such:

        I recommend using something like this to protect the blade (and yourself) when not in use:
