    Dry brine as far in advance as possible. At least 24 hours with the salt on, overnight won't do that nice piece of meat justice. There, that's my contribution, looking forward to seeing your cook!! 🔥🔥🔥♥️🐿

      I wish! You're seeing the 12.79 lbs (5.8kg) label. Actual cost is $4.98/lb. Obviously I have no experience with brisket but that doesn't seem awful for USDA Prime...

      I was wondering if I missed a really good sale… Yes, $4.98 is a good price, especially if they’re as good as the two Wild Fork sent me last fall.

      Think I paid $4.29/lb last weekend at Costco, the cheapest I've seen it in a while for Prime. I wasn't too impressed with the quality, though... looked fair at best. Bought three of 'em @ 16-17 lbs, but not for me, for a buddy. He's not nearly as picky as I am. lol

    Hey, for planning purposes, about how long will a hunk of frozen brisket this size take to thaw in the fridge? A week? Biggest thing I've thawed thus far are pork butts that were only about 2/3 this weight, and those have thawed in a few days...
