So my son, future DIL (that’s a whole other story), and four year old granddaughter escaped Disney yesterday and spent the day here. Just grilled some hot dogs and burgers for lunch. No big deal. Sorry, no pics of any of the cooks. I was too busy doing the Grandpa thing.
Dinner was 12 pounds after trimming of Click brisket. Cooked on the Yoder 640 at 225F for fourteen hours with Meathead’s Red Meat Rub. Then wrapped in butcher paper and placed in a cooler with towels for five hours until dinner time. With the brisket resting comfortably, it was off to the new Minions movie. Review: thumbs down from all the adults and two big thumbs up from the four year old.
We came home, sat down for dinner and I sliced some of the brisket. Gave granddaughter a piece from the point. Her first remark was this is good. Then she cut her next bite off with just her fork. Then came the best compliment any of my cooks have ever gotten. She kept cutting up her whole piece with her fork, turned to my son and said, look at Grandpa’s Magic meat.â€
So I about melted at that point.
