I went and helped our beef rancher with slaughtering today and came home with a tongue, heart, and tail (front, middle and behind of the steer). I got plans for the heart and tail, but nothing solid for the tongue. I'm leaning towards a tacos de lengua recipe I saw on SeriousEats, but I'm open for any of your favorite recipes and suggestions. Whatever you do, don’t pickle it. That’s what my grandmother used to do with tongue and it was perhaps her only culinary failing. To this day, I can’t eat tongue. Not even on tacos.

I cook tongue a few times a year. For beef tongue, I use a pressure cooker with beef broth, onions and peppers for 35-40 mins. Then peel the skin off and all the fat. The tip should pull apart easy, the thicker rear part I’ll throw on the smoker for a few mins and give it a nice light smoke and a little glaze. You can either chop it up or slice it for sandwiches. My kids like the pulled beef tacos!!

I like to just boil, peel, cut thin, and then grill and eat them as medallions with Chimichurri. Probably just a lack of imagination on my part but I never actually ate them in a taco but that sounds great and I will have to try that. https://jesspryles.com/ultimate-beef-tongue-recipe/
