      It’s a round steak that has been blade tenderized, a lot. It almost looks like a very flat hamburger patty.

      Panhead John Thanks PJ, maybe I live under a rock but I haven't come across that cut. I might chase it up as the chicken fried steak sounds delish. Crumbed steak is everywhere, but battered steak isn't really a thing here.

    I'm not much of a fan of using store-bought cube steaks for my CFS. There's always that sneaky strip of gristle (or two) in there somewhere. What a buzz-kill that is for such a delicious dish.

    As a kid I quickly learned that if your momma didn't make good chicken fried steak, then make friends with a kid whose momma did. Fortunately, I had a good friend whose mom was a great southern/country cook.

    Anyway, nowadays, because I can, I use pounded thinnish slices of filet for CFS. Not a flicker of gristle in sight. Buttermilk, bacon grease and allowing the well-dredged pieces to sit on a wire rack for 15 minutes before frying (as others here have already described) as well as several dashes of hot sauce in the milk/egg mixture are my keys to success with this dish, or so my family thinks. And that's all that counts, really. Our kids never had to go up the road to find a friend whose momma made good CFS. At least I don't think they did.
