What do I want for Father’s Day?
I want to have fun on my grill! And I want someone else to clean up!
I’ve been meaning to do this for a while now…
In this corner, weighing in at 2lbs, 13oz, a Wagyu flank steak from Allen Brothers!
And in the other corner, weighing in at 2lbs, 5oz, the challenger, a USDA Prime flank steak from Creekstone Farms!

On first inspection, the Prime (lower) looks bigger, but the Wagyu is thicker, and it is definitely larger. I cut a pretty big slug of solid fat off of both, upper right on the Wagyu and lower right on the Prime. This is 10AM, right after salting.
5PM, gotta get those fires going! The steaks are going on the BGE. For the Weber, I cut some zucchinis and let them marinate in bottled salad dressing for a few hours; those will get mixed with roasted red pepper strips.


Man, I love the smell of burning charcoal in the late afternoon.
Time to get stuff over the heat… the zukes are first, I can’t pay attention to the steaks until those are safe.


And now, the flankers. These came out as those one-second shots, I wish I knew how to post them like that.



These I did constant flipping; at a certain point, I had to pull one and work the other, then switch them; the fire was just too hot and smoky with both steaks on!

I did a board sauce from the herb garden: parsley, sage, rosemary, thyme, chopped garlic, roasted red peppers, EVOO and a dash of red wine vinegar. These steaks might be a tad underdone, but they do make a nicer photo that way!



The verdict: holy heck, those steaks were freakin’ AMAZING.
The winner?
Among the four of us, none of us could tell a difference! Both were tender, both were juicy, both were beefy. And, it wasn’t like they were both "okay… alright." They were both incredible. And this aligns with my experience from both Allen Brothers and Creekstone.
Both these products go on sale from time to time, with Creekstone being more frequent. Right now they’re 3 2lb steaks for $104… sadly, they were 3 for $69 when I bought them. Allen Brothers has 2 2-3lb Wagyu steaks for $149. All my Allen Brothers flankers have been heavy, close to 3lbs.
The sacrifices I make for my AR brothers and sisters. But, someone has to do it, someone has to advance the science. Really, we were all expecting the Wagyu to take this one. But American Prime stepped up!
