I’m wanting to buy a higher grade brisket, then what I get locally. The company I seem to be most familiar is Snake River farms. I think I saw a black grade for 139.00? Are there other places I should consider?

I have a Porter Road brisket in the freezer though they are out of stock at the moment. Everything has been amazing from Porter Road though. Easy enough to find 10% off coupons.

Creekstone also has very famous brisket that is popular here and these are used by Aaron Franklin. Expensive!

As near as I can tell, Porter Road dry ages all of their beef. Creekstone does not. However, Creekstone gets its meat graded (Black Angus, Duroc, Prime etc) while Porter Road relies more on its processes to deliver high quality meat.

Agree with the Click recommendation. I have one in the freezer now. Everything I have received from them has been good. Bummer about the shipping, though. While I have not tried their brisket alderspring Ranch has not disappointed. And if you are a high roller, Stemple creek for the win.

What is that? Is that a brisket flat? Definitely well marbled, but looks exceptionally even in thickness from one end to the other. Most of the ones I've seen taper heavily at one end.

Yes, it's a flat. Look at how thick it is! This is not a brisket I cooked. Buddy was showing off his knife skills. These are the briskets I buy and I'll trim up, cut in half and use for 2 contests. They will ship fresh. On par with SRF for price, better than Gold.

I’ve had SRF briskets, RR Ranch, Black, and Gold. Black is the sweet spot for them.
The absolute best brisket I’ve ever cooked was a USDA Prime from Creekstone.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
Richard Chrz after my recent experience with having to toss about 1/3 of the meat in an order from Click, due to insufficient ice for a shipment that I got back around Easter, I would be afraid to order from them in summer unless you know you will get it in 1-2 days max. My order got here a day late, and several items in the top of the box were pushing 50 degrees and got tossed. They refunded those items, but still, I hated to toss meat.
I've had good experience with Porter Road, and they are physically closer to you than some of the others, so shipping may be faster from Kentucky to Wisconsin.
