Hello everyone. My wife and I got a half cow from a local butcher. We are planning on smoking some beef short ribs this weekend. The ribs are the long "dino" type that are 2 to 3 lbs each. We are planning on having 7 adults (which includes me and wife). I'm wondering how many of these things should I cook?

I did a 3 bone beef rib yesterday, it was 5.9# raw. I used Meat Church Holy Cow. My wife and I ate the end ribs yesterday and the center was much larger, probably enough for the two of us for another meal. We had an ear of corn and some potato salad and I couldn't really finish the rib, it is extremely rich. Here is a couple of pics, BTW, they turned out fantastic.

I'd almost rather have those ribs split in 2 pieces across the bones, so the portion size isn't just large and larger. They're really rich and filling (at least for me).
Beef rib meat makes an awesome sandwich if you pull the meat off the bone, remove any thick band of cartilage, and slice thin across the grain.
