    What to do with a brisket point?

    I have a 10.5 pound packer in the refrigerator, ready to have something done to it. I plan to remove the flat and put that up for corned beef so I can make pastrami out of it. That leaves the point.

    What to do? What to do? Should I try burnt making burnt ends for the first time even though I haven’t really liked them when tasted at barbecue joints? Should I just smoke and slice it? Cut it up for chili (that’s a lot of chili)? Grind it for burgers or sausage? Something else?

    As you can see, I’ve managed to overwhelm myself with ideas. So Pit, does anyone have a good recipe they think I should try? I’m open to suggestions.

    I would smoke that sucker for sure. The only brisket I've done is a point, and it came out really well! Some really good meat there, I would personally never want to grind it up or relegate it to burnt ends or chili... but I'm very much a "point" kinda guy when it comes to brisket rather than the flat, I've always preferred it.

      I've done multiple things like you suggest. I think last time we sliced some of it for dinner then cut up the rest for chili and pizza toppings. None of it went to waste. We like the pizza topping, sauced it again then baked the pie. You may be in the same boat as us, only two of us at times when we smoke a large cut, thus have to think about saving the leftovers.

          Also, I used Salt Lick BBQ seasoning and Stubb's Original BBQ sauce.

        Smoke it!

        Use the leftovers as part of a breakfast hash, tacos, pizza toppings, and a grilled cheese sandwich are some of my favorites.

          I have switched to Dr. Pepper for the sauce, but Coke is just fine.

                  I usually make pastrami or burnt ends. There are a lot of recipes for burnt ends so you can probably find one that looks interesting. Look forward to hearing and seeing the pics of the decision.

                      Steve Raichlen has a nice recipe that wraps the point in bacon....Would like to give that a whirl next weekend
