    Unsafe beef ribs, can I still make stock?

    So my recent Click order had bad luck. I know I can't eat them because who knows how long they were over 50 degrees... but could I roast the bones and still use them for beef stock? Could I pressure cook fat trimmings for tallow still?

      bummer, I was hoping at least a long roast of the bones followed by hours of boiling MIGHT be ok

      I’m going to contradict everyone else and say go for it. If you get sick then it’ll be a learning experience for the rest of us. Isn’t that what we’re all here for…to help others learn?

        I'm torn 'cause I'm not looking at using the meat, I wanted to roast the bones for a few hours and then freeze em and then boil 'em to make stock... but I got a life, even if it ain't a good one all the time, so don't wanna mess that up

      Cooking spoiled meat won’t make it safe to eat. Though it can kill the bacteria and molds that populated it, it won’t get rid of the toxins and spores that they left in it. To avoid food poisoning, throw out raw meat when it’s past its expiration date or if you suspect that it’s spoiled.

        that's talking about eating the meat though.... I was thinking an hour plus at 450 for the bones or fat, freeze, then boil again for stock or tallow. Had ZERO intentions of eating the meat

      You can probably make a safe stock with it but spoiled meat is likely going to carry over into the flavor of the stock. "Well, it’s safe to consume but ya gotta ignore that off odor that smells like someone took a dump in the pot." I tried it once with slightly spoiled chicken and the stock was so damn sour that I dumped the entire pot.

          What’s the worst that can happen? You wind up in the hospital with acute food poisoning? While you’re in the hospital, you pick up a drug resistant staph infection? What the heck? Go for it. You only live once.

            Your call, but do they smell? If they smell good I think you could roast and make stock. There's a risk but just because they were over temp for an unknown amount time doesn't automatically make them unsafe. Were they shrink wrapped?

            I would skip the tallow but the bones might be ok.

              Comparatively speaking, meat is cheap but ER visits are expensive.
