Home made corned beef. Recipe change from Meathead
If you haven't tried brining and makin your own corned beef its absolutely amazing. I did notice that if you rinse the brisket after it brines and change out the cooking water after 30 min simmer it seems to be more bland than if you don't. I've made this a dozen times or more and it seems better if you dont change out the water. Am I doing something wrong? I'm sure I'm not nearly as smart as the recipe author.
I haven't stopped at corned beef, so I can't help. I've always made pastrami, so I soaked to desalinate and then made the pastrami and it turned out great.
Boflys, just an operational suggestion for you, if you mention someone you'd like to be aware of your commentary place the @ sign before the exact format (caps and spacing meaningful) of their screen name, e.g. Meathead, that way you might get a response back directly from the author of, in this case, the recipe because they will be flagged via email.

Boflys Other than boiling it, you are doing nothing wrong. The boiling step, will always make the corned beef more bland.
If I were you, I would skip the boiling step. Desalinate for 8 hours in fresh water, in the fridge. Then add some pastrami rub, wait a day and smoke it. That is the best use of corned beef. (IMHO)
