    Could the brisket be bad?

    I pulled a cryo-vac brisket out of the deep freeze on 3/19 to thaw. Noticed on 4/7 that there was a puncture in the packaging so decided on 4/8 to go ahead and dry brine it.

    Should I be worried?

      If Jerod says it, it is gospel. I rank food safety in the following order (no kidding) - wife #2, Jerod #1. Wife sometimes wins not because I don’t believe him but because I want to eat. If he explains why in a post she always agrees with him.
