    Oh yes, this will be made



    but what is a fatty end brisket …. And more importantly, where would one find it? Don’t brisket parts typically come in horse-sized chunks? Don’t think we’ve ever seen a brisket package smaller than 8-15lbs.

    Prove us wrong, point us in a direction….

    For fatty end brisket I'd think they mean the point or the end of the brisket it's on (so the flat at the end).

    ok watched it and that just looks like they sliced a hunk off the side of the brisket where the point is.

        But what if we only want to purchase that 2 lb piece? Check with a local butcher and see if they'll humor us, or just bite the bullet and buy a full (Costco Prime ) brisket and cook it in parts over some eventual period of time?

        (or find a friend with a smoker and have them throw the remaining brisket into the hot box the next time they do ribs or whatever)

        Not yet interested in doing a full brisket cook ourselves for various reasons.

        Most of the grocery stores that sell briskets also sell them in pieces….either flat or point. At least the stores around me do. Whenever my local Kroger has briskets, which is most of the time, I’ve always seen 2-4 pound individual packages of either the flat or point for sale, usually both. This is common.

          +1 around here. HEB sells chunks, but per pound I’m much better off going to Costco.

          We'll check the local meet market and see we encounter the same.

          Then we'll go to the grocery store.

        After watching the video, I don't understand why he uses the mustard binder. The "rub" he makes looks moist like a paste and therefore should not need a binder to adhere to the meat.

          Because he learned that from another recipe, on it goes....like soaking your wood chunks. Even Steven Raichlen propagates that myth....sigh...

        A piece of the point. Buy a packer and then cut it up. Use a piece of the point for this and then either portion the rest, or grind it. Brisket burgers and meatloaf are awesome.

          My butcher has briskets that they will cut chunks off of and sell by the pound. I have purchased points this way in the past.

            Just throwing this out there, CreekstoneFarms.com (no I don't work for them or get any advertisement commissions) occasionally sells brisket points, sometimes on sale and often twin-packs. If you struggle to find them, or don't want a full packer, you have options. A properly smoked & peppery brisket point is my 'last meal' choice, juts other-worldly good IMO.
