    Steak Diane today with SRF prime filet mignons. In other words, failure was not an option.

    As an experiment I sous vided the filets and used the "bag juice" (strained) with the beef broth. More or less followed https://www.saveur.com/article/Recipes/Classic-Steak-Diane/

    Started with the Blue Öyster Cult mushrooms. Don't fear to reap them. they're burning, they're burning for you.

                    Blue fungus and I have never seen filet mignons with that much marbling.

                        It was awesome. But I must say these were the best marbled filet mignons I have ever cooked and I was tempted to just eat them.
