    Corned beef into hamburgers?

With all the small packages of corned beef brisket in the store, I was thinking of grinding one into hamburgers.

Would this work, or is the salt flavor too much (even after soaking)?

I think the salt wouldn't be too bad after a good soak, but I'd worry about a Paddy holding it's shape.

This is the way I would do it, though maybe with buffalo or even turkey instead of beef to let the corned beef shine a bit more... Pub-Style Corned Beef Burgers Recipe | Food Network Kitchen | Food Network

Desalinate and rip it up brother! That is gonna be good. I'd mix in some of Meathead's Pastrami rub too.
