          The collagen casing was little tough. I peeled it off and sliced up for Mr. Ritz. The cheese in a can would have to wait for the next pack of Ritz. Wasn't marbled very well. I suspect New York Strip reject meat, as in ALL the New York Strips. Good balance of heat and meat. Cheese prolly came from a can.
