Lots of roasts, about 50 lbs of ground beef, short ribs, etc. brisket is not very big but will be a good test for the pellet grill. Time to try some new recipes!

I laugh when someone tells me they have a brisket off a calf someone just killed. Not many raise a single calf to approx. 1,300lbs.
Love getting some good ol' local slaughterhouse ground meat when dad kills his calf.

We get ours right before Thanksgiving every year and this year I went in on a full steer and ended up with 1/4. Plenty of meat but more roasts than what I was hoping. I'm guessing I'll be grinding them up and mixing with fat for ground beef towards the end of next year to make way for next year's steer.
