    Welp. The 1/2 cow is here

    Lots of roasts, about 50 lbs of ground beef, short ribs, etc. brisket is not very big but will be a good test for the pellet grill. Time to try some new recipes!

      I laugh when someone tells me they have a brisket off a calf someone just killed. Not many raise a single calf to approx. 1,300lbs.

      Love getting some good ol' local slaughterhouse ground meat when dad kills his calf.

        Yeah my future brother in law set this up, no idea what the weight was on the hoof. Small tri-tip, decent prime rib and not-a-packer brisket.

              We get ours right before Thanksgiving every year and this year I went in on a full steer and ended up with 1/4. Plenty of meat but more roasts than what I was hoping. I'm guessing I'll be grinding them up and mixing with fat for ground beef towards the end of next year to make way for next year's steer.
              Congrats and can't wait to see what you do with your cuts
