Finally I had a successful pastrami sandwich

A special sandwich I had this evening:

I ate a sandwich from our pastrami. From the picture you can tell it is very good. I believe the recipe of the spice mix, the brine, the cooking is proved.

That much meat of brisket, I would feel too rich. But pastrami, it was balanced with the flavor and the lean meat. So I finished that Sandwich quickly with no problem at all, actually I gave half of it to my partner, but I felt that I could have another one.

It was cold slice, not warmed. Frankly I dont know it should be warm or cold, never had any pastrami when I was in US, but cold works right good for me. I could have this cold slice in the morning with a coffee.

To be able to have this sandwich, I have to thank my loyal supporting friends who brought the slicing machine and the pastrami can finally be presented the right way.

Yes only with that slicing machine I could get such thin slices, which makes difference

It's 6:20 am here, and I would really like a pastrami sandwich right now. Thanks.

Ideally you want it warm, it's typically served steamed then sliced at delis. The reason you want it warm is to keep the fat soft. But, I eat it cold all the time too and it's just as enjoyable Looks like you did a great job!

Some cold out cheese, which I followed Chud BBQ for his American Cheese recipe. Will redo that next time

Looks fantastic. Next time, steam the pastrami first. If your pastrami was awesome cold, it'll be amazing steamed!

Got it, most of the recommendations are to steam it
