What to do with "garbage" beef tenderloin?

      I cooked the steaks last night and they came out good. I'm considering all suggestions for the other pieces

        I suggest kebabs or spiedes. I think Meathead has some recipes on the site.

          Stir fry or kebobs. Delicious and tender either way. I made burgers with the beef tenderloin scraps + added fat once before, but the flavor was not there as it usually is with chuck, for example.

              I'm going to second Kathryn's fzxdoc suggestion and suggest either use it as stir-fry meat, or kabob meat. It's too lean to do anything but hot and fast cooking in my opinion.

              If your weather is anything like mine, I'd be cutting it up and doing something with it in the wok with some teriyaki sauce for the finish... my flat top is out in the freezing rain and sleet that is rolling in at the moment, and I can't see myself doing a stir fry out there today for sure...

                We use leftover meat to make street tacos all the time. Chicken, pork, beef....whatever.

                I also use leftover meat to make dog food. Dice it or grind it, fry it with a touch of oil but no salt or seasonings. Oscar loves it with brown rice and peas

                  Let's put one thing to bed before we go any further. THERE IS NO SUCH THING AS "GARBAGE" TENDERLOIN. You are talking about the most tender cut of beef on the cow, not to mention one of the most expensive. Savorize every piece of that muscle my friend.

                  I'm in with the stir fry group, taco group, or steak and cheese group! Lemonade out of lemons. It is a nice piece of beef. Post pics when cooked, please.

                    I once bought a whole select tenderloin for some ridiculous low price (about 20 years ago) and made chili from it. It was pretty damn good actually.

I know, I need practice . Cooked it until the center hit 125 and carryover brought it to 130. I sliced some up for sandwiches and it wasn't bad.

                        That looks damn good to me. Nice Save! Unless it was overcooked I do not believe I have ever seen a bad piece of tenderloin.

                        It's like the old joke about one friend asking another, how's business? Friend says it's a lot like sex. When it's good it's great and when it's bad it's still pretty good.
