    Brisket on the Gateway

    Friday I am doing a packer brisket on my gateway 55 gallon. I have never done one on this cooker - never cooked a brisket over live fire. Usually I do them on an offset or a gravity feed. Any tips from the drum community?

    Sounds like it is going to be good. Are you going to hang it or cook it on a grate? There is great info in this forum if you search brisket. I had great success cooking one on a Bronco thanks to the input on this forum and Meathead's method. I will suggest a couple things. -Do not to mess with it too much once it is on the smoke. No need to be nervous and peak. The Gateway will do its job. -No need to wrap if you can wait out the stall. -And, if you have access to B&B charcoal use it. Please share pics when done.

      There is really nothing different than cooking it on any other cooker. Jsut make sure to watch the meat temp and keep the smoker at about 275. Then you will be just fine. The meat might drip on the coals and cool things down, so you may need to move the basket from time to time, or crack the lid to make sure the temp is maintained.

      Other than that, barrel brisket is great and pretty easy. Way more handsfree than running an offset.

          I have 2 grates on my gateway. I put 1 grate down low and put a foil pan to catch the drippings once bark is set. Seems to help with temp control
