I bought a hunk o meat at Costco and made my own steaks. I got a NY Strip because I couldn’t pass up the price and everything else was about twice this price.
Sous vide to 137, cold shocked, patted dry, used melted pork fat (I bought it commercially) and used Char Crust (garlic peppercorn). I wanted surf and turf, so I got these U12-14 shrimp and made a chili lime marinade. Seared up those bad boys too.
I also made a side of brussel sprouts in the oven.
I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.
