Sourced just over 5 pounds of beautiful prime chuck roast for $7.99 a pound from the local Fresh Market. Added some semi-boneless leg of lamb too. Now I am all set for the next time we make some sausages and burgers. I am just satisfied I was able to get some prime chuck as it is the only place in my area and finding this online was tricky as well.

Wow, $7.99 for Prime Chuck is a great price. Do you really find a difference between Prime and Choice Chuck? I ask this because only the ribeye is graded by a USDA inspector. If the ribeye is graded prime, then the rest of the cow is prime. At least that is what I was told by an old time butcher with 40 years experience. Maybe he was wrong or it's changed.
As an old guy, I've eaten a lot of beef and I've never seen or tasted a difference between Prime and Choice Filets and Tri-tip.

gboss I thought he had passed away. He must be well into his eighties or even nineties. Surprised since he is (was?) a big chain smoker. Nice guy and also a master gardener. I took his wife's canning class just so I could get her spaghetti marinara sauce recipe. Which I use to this day. Hope you enjoy the book.

With chuck roast I think a lot of it has to do with what part of the chuck primal it’s cut from. At least that’s my theory. I often see very lean chuck roasts and occasionally I see very well marbled roasts. Here’s a choice chuck roast I picked up recently. Any time I see one like this I buy it and throw it in the freezer.
