Thanks, I'm cooking one of what you are cooking many of and thought you'd have a good idea of timing. I removed the single bone and plan to smoke the meat at 225F with a target internal temp of 125 and then sear. Sounds like a total time of 1 hour will be just fine. Thanks for the insight! Whenever my pre-sear IT has been over 125, I have overcooked my steaks by the time the sear is done.
