My name is Josh, not Joey (surprise), and I reside in Central Ohio. I have been grilling since I could drive, and smoking for around 15 years. Over the past couple of years I have gotten more into just cooking, and really enjoy sous vide and the flat top. I find myself experimenting with different foods and new ways of cooking as an outlet to work stress. I use every piece of equipment I own regularly, with the exception of the electric smoker. That only gets brought out on occasion to make jerky.
My favorite beverage is bourbon. I typically have at least 8-10 bottles open at any given time. While I have favorites, I enjoy sampling new and different varieties.
Locally, the Harris Teeter butchers have been a good source for me. I've got a few nice rib roasts there, usually 10 - 12 lbs and choice. They have cut whatever size I asked. They were on sale the week before Thanksgiving and may come back around before the holidays.
They have finally backed off of that practice, at least at our local Costco. Only in the last six months or so, but I am now seeing the smaller cuts of Prime that are not blade tenderized. For what it's worth, the roast I pictured above was the big cryovac roast.
Joey877 That’s awesome. I looked at my local Costco when shopping for thanksgiving and everything was blade tenderized. I’ve asked a couple of their butchers why and they both hate that they do it, but it’s a choice that comes from higher up. Good to hear that may be changing. They always have great prices on nice cuts, so I hope to be able to find more that aren’t blade tenderized!
I usually buy Double R Ranch beef from my grocery store but it’s also available online from SRF. Even the choice beef is fantastic. A choice roast is about $20/# online but they’ll probably have plenty of sales between now and Christmas. It’s way better than the prime that Costco has.
This is the roast for home cooks who prefer a prime rib with the bones in place. Double R Ranch bone-in prime ribs are cut from premium Northwest beef and are available in two sizes. The 3 bone roast has an average weight of 7 lbs. and the 4 bone averages 9 lbs.
