Snake River Farms flat iron steak

Got the Kobe Gold on sale for $60 a slab. My first SNF purchase. It was incredible. Better than a prime strip. Even at $90 a slab it's not a bad deal. That will feed four or, at my house, almost get three full. Highly recommend. I'd say don't slice it as thin as you would a flank steak- it doesn't need it.

    Thanks for the feedback.

You do it hot and fast?

Yes. Dry brined a day in advance (thawed), coated with olive oil, and grilled over direct heat. Five minutes a side and it was done. I made a board sauce per Meathead's recipe.
