Where to place thermometers when cooking a brisket
Doing a brisket for the inlaws (outlaws?) this weekend. I have two thermometer probes to use. I'll use the first one to track the ambient grill temp, but am not sure where I should be sticking the second.
Brisket cook is going to take awhile. You don't say what you are cooking it on.
When using my Weber kettle or even the PBC I only worry about pit temps for the first few hours. I will most likely reposition this hunk o meat a couple of times, so a meat probe will just get in the way. When I do "stick it" I also go to the thickest part of the flat.
