How long for a 13lb brisket on 18" Smokey Mountain Cooker?
First post here... Have been cooking on a Weber kettle for all of my adult life and recently got a WSM. I've seasoned it per Soo's instructions and am giving it an inaugural run with a 13lb packer tomorrow. (I know, a little headstrong, but whatever.) How many hours should I expect? I'm in Chicago so it'll be about 90 degrees outside.
awfenske Are you going to wrap the brisket? That will reduce the cooking time. I can get a brisket that big done in 10-12 hours when I wrap at 160. I let rest for 2-3 and get great results. I suggest you follow the brisket recipe here exactly for the best results
As an aside, you can also do a brisket on the kettle with a SlownSear.
The last brisket I did on my 18" WSM, I had to cut a piece off to have it fit. No issues on a kettle
