    Dry brining a brisket

    Bought a prime brisket packer a few days ago. First prime I've tried.

    Usually I just slather some mustard on my briskets, then generously sprinkle equal amounts of kosher salt and coarse ground pepper, and pop it in the smoker (Weber Smokey Mountain, 22.5").

    But I thought this time I might salt and/or pepper it a day or so ahead. Any ideas on that?
