    Tex-Mex meatloaf

    Saw this @ BBQ Pitboys, I know nothing about them but the recipe looked worth a shot. I used more peppers and onions, and egg and tortilla chips. It came out pretty good.

    5 lbs 80/20 gr beef
    1.5 lbs chorizo (I couldn't find fresh so I used pre-cooked.)
    1 can refried beans
    1 can Rotel tomatoes with chiles
    2 eggs
    1 cup or so of crushed tortilla chips
    1 poblano pepper, finely diced
    1 bell pepper, finely diced
    1/2 large onion, finely diced
    2 tsp cumin
    2 tsp chili powder
    2 tsp Mexican oregano
    1 tsp garlic powder
    1 tsp pepper
    1 tsp salt

    325* until a temp of 165*...
