I stumbled upon Adam Ragusea's YouTube channel a few months ago. He is a former NPR reporter and professor of journalism at Mercer University and his videos are really well done and I look forward to them every week. (His style is a slightly-more-serious Alton Brown.) He doesn't do BBQ, but he does a recipe video on Thursday and a food science video on Mondays.
Today's food science video is on what is dry aged beef and it is excellent. Well worth the 16 minute watch.
