    Excellent introduction on what dry/wet aging beef is

    Hey all,

    I stumbled upon Adam Ragusea's YouTube channel a few months ago. He is a former NPR reporter and professor of journalism at Mercer University and his videos are really well done and I look forward to them every week. (His style is a slightly-more-serious Alton Brown.) He doesn't do BBQ, but he does a recipe video on Thursday and a food science video on Mondays.

    Today's food science video is on what is dry aged beef and it is excellent. Well worth the 16 minute watch.

    Good overview. I need to go buy a strip loin and Umai bag it, haven’t done that in a while. That chef sure knew his chit !!
