Seasoning clay bean pot

    This is a tenuous extension of clay pot cooking. Rancho Gordo beans tricked me into a rabbit hole for which I have not yet discovered the escape. Latest is a purchase of a ClayCoyotes tagine. the dimensions, fzxdoc, are: holds 2.5 quarts of liquid ambrosia; 2.5 inches deep, 8.25 inches inside diameter at bottom,10 inches top id, 4 inches inside height of lid, 8.75 in outside diameter of base. Roasted a Marys Chicken, about 3.5 lbs, cut into 10 pieces without backbone/ribs. Outstanding, fed 4 adults, 2 little kids, leftovers for 2 more servings.
    Local spice shop, at my instigation, now carries ras el hanout.
    Local thrift stores are sold out of Mediterranean and Moroccan cookbooks (I have them). ofelles and 58limited are accessories.

      yakima ,it sounds as though you're having fun wandering through Wonderland after falling through the RG Bean Rabbithole. You're taking some of us with you as we play around with clay pot cooking. Glad to hear that the ClayCoyote tagine is working out so well. That Clay Coyote website is just too tempting with its smoker-friendly flameware.

      I'm still doing the two steps forward, two steps back shuffle as I beam up my cart on the Clay Coyote website. So far I'm holding off. I did buy 4 pairs of shoes this week, though, which could have paid for most of the wishlist goodies in the Clay Coyote cart. It was a choice of which items, cookware vs. shoes, that I didn't need the most.

      Rancho Gordo's recipe for Christmas Lima beans with Gorgonzola sauce is outstanding. I used Blue Stilton cheese from Costco.

        I scoped out the Christmas Limas with Gorgonzola recipe on the Rancho Gordo site, yakima , and it does indeed look delicious. Thanks for the recommendation.

          RG Christmas Limas are not your momma's lima beans for sure. They're so delicious. I was bowled away when I first cooked a pot of them. Then I got online and ordered 2 more pounds.
