    Seasoning clay bean pot

    Playing with Mixteca unglazed clay bean pot from Rancho Gordo. Materials say do not need to season. Other sources advise seasoning. I did not season, having great luck with beans. But, what are your experiences and collective wisdom?

    I have let my cooks season my pots, I have several. I do soak them and the lids in water for about 1/2 hour before each use. I'm not abnsolutely sure it makes food taste better. But serving it out of a clay pot makes me feel it does.

      It is helpful. I am just giving you a friendly hard time re your phrasing. "Let my cooks season my pots" can be read as many cooks working in your kitchen!

      I find interesting that one outfit says they use fine clay, which does not to be seasoned. Maybe America's Test Kitchen has weighed in on this. Need to look.

        I have several clay tagines. The supplier recommended seasoning them before first use, saying that it makes the clay stronger. Their seasoning instructions are: soak in cold water then let air dry. Using olive oil brush all exposed surfaces - inside and out. Place in oven and gradually heat up to 300o for two hours.

            I don't have an unglazed clay pot for cooking beans, so I can't really weigh in on whether or not to it needs to be seasoned. Seems like it wouldn't hurt either way to season it, but that's just my guess.

            Since you've already used it, yakima , let us know how you like it and whether you would recommend it to us unglazed-potless wonders. I'm always down for a new cooking toy.

            fzxdoc. I really like the pot. It is striking, the process is interesting. Is it better than other methods? I have no idea. Have not done a side by side comparison. We have a gas cooktop on which the pot works well.
            Am resisting the temptation to riff re cooking beans on gas.

            If you have gas, and space for the pot, go for it.

              Phil, I almost always cook my beans (all Rancho Gordo) in the Instant Pot. I'll keep an eye out for when the pot like yours comes back in stock at RG. Can you saute your aromatics in it before adding the beans and liquid? I know nothing about using unglazed clay pots.

            And here I felt all rustic using my Lodge cast iron dutch oven to cook beans... dang. Now you got me looking at clay pots!

            Whew! I just checked Rancho Gordo and they are all sold out of those clay bean pots, so MCS crisis averted!

              I may have ordered the last one. They showed out of stock immediately after confirming my purchase.

              Do not get the bigger one, unless you are always cooking for a crowd.

              yakima my wife would kill me if I brought a special purpose bean pot into her kitchen for her to have to store... so I will likely keep on using my dutch oven...

              It looks to have a pretty small diameter rounded bottom. Does it stand up ok on its own on the kitchen counter?

            jfmorris fzxdoc I have several unglazed pots and really enjoy cooking stews and beans in them. I have a couple of the "normal" red clay ones and a couple of these black clay ones. I always use a flame deflector under the pot and heat it up slow

              ofelles my market sells Chamba. They are gorgeous! I’ll take pictures this weekend of what we currently carry.

            fzxdoc, jfmorris. I have sautéed aromatics in the pot, which stands fine on counter and gas grate. No deflector used. A big bunch of roses could introduce the pot!

              I can't get into the instant pot. Too modern. Amazed that a pit barrel cooker queen would confess to such use.
              I use a good thermometer, but can't get into bluetooth, wifi, etc. for grills. My time on this deck is more meditative than productive. And I am not answering the other thread re number of grills. Like answering questions about how many cows you have. My father, now gone, answered the cow question: I have enough cows for the grass.
              so, how much
              grass? Enough for the cows.

              I love my Instant Pot, yakima , but not nearly as much as I love my PBC. Perhaps that will redeem me in the end.

            I like the idea of introducing a newcomer to the kitchen inventory by putting roses in it for a while, yakima . To my eye, there's something quite satisfying about the look of Rancho Gordo's Mixteca bean pot.

              Making MH's red beans and rice today, with Santa Maria Pinquito beans. Throwing in some remains of a suckling pig from last summer, done on a rotisserie over a Breeo smokeless fire pit. (That was a production!)

              One positive outcome of this thread, hopefully, is that I will learn how to get a photo from phone to laptop to this forum. Am hopeful that son in law can beat it into my head tonite.
