I've used this on ribs, but I'm sure it would be really good on pulled pork sandwiches, too!
Chipotle-Plum Sauce
Ingredients
Directions
Mix 1/4 cup hot water with the instant coffee and stir to dissolve. Once, dissolved, combine with the plum sauce, orange juice, chipotle sauce and brown sugar in a small saucepan over medium heat. Bring the sauce to a boil and reduce the heat. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
I'll never forget the look of satisfaction from #1 Son-in-law as he chowed-down on the ribs.

Chipotle-Plum Sauce

- 1 teaspoon instant coffee ( I use Expresso )
- 3/4 cup plum sauce ( Whole jar is close enough!)
- 1/2 cup freshly squeezed orange juice ( yeah this is good if you gotta juicer, otherwise Tropicana, et. al. )
- 2 tablespoons minced chipotle in adobo with sauce ( you can pulse this in food processor and freeze extra in ice cube tray )
- 2 tablespoons brown sugar
- Salt and freshly ground black pepper
- 2 1/2 pounds pork back ribs
