Easy Corn Casserole without Creamed Corn? Yes!

Prep Time: 5 minutes | Cook Time: 35 minutes | Servings: 4
Ingredients:
½ cup sour cream
6 tablespoons all purpose flour
3 tablespoons corn flour
3 tablespoons sugar
1 ½ cups whole kernel corn
1 teaspoon baking powder
¼ teaspoon salt
3 tablespoons butter
2 eggs
Directions:
Preheat the oven to 350F. Mix all dry ingredients in a bowl (two types of flour, baking powder, salt, sugar).
In another bowl, mix sour cream, melted butter and eggs.
Combine dry and liquid ingredients, also add corn kernels.
Transfer the corn casserole mixture into a baking dish (8*8 inches).
Place in the oven and bake for 40 minutes or until the top of the casserole is firm enough. It may be slightly moist inside.
Serve warm or cooled, with fresh herbs and sour cream.
Notes:
Note: This recipe is easily adjusted for 2 servings by clicking the 0.5 button above, in the number of servings tab. Bake in a 6x6 inch baking pan.

If you found my recipe because you like corn casserole with creamed corn but you don't have any creamed corn, you're ok too. Just take half of your whole-kernel corn and a splash of heavy cream. Use a blender or food processor to lightly puree it, still leaving some small pieces of corn. Mix this "creamed corn" with the whole kernel corn and finish the recipe as written.
