Set up Kamado (we have an XL Big Green Egg) for 400 degrees. Take a whole cabbage head, and set it stem side up, directly on the coals for 20 minutes. After 20 minutes, with gloves, take cabbage head and turn it stem side down, and put it back directly on coals for another 20 minutes. Once that second 20 minutes is up, take a fork and check…if it goes in easily, it’s done. If there is resistance, cook 10 more minutes. When done, take cabbage off Kamado. It will look like a burnt meteor. Take off the outer layer of burnt leaves. Core out the stem, cut into quarters, and serve. Serves 4 people or 6 with a large cabbage head. It will be tender, smoky, and delicious.
