    Broccoli Rice Casserole

    Broccoli Rice Casserole From Scratch

    Veggies-Salads
    Prep Time: 20 minutes | Cook Time: 35 minutes | Servings: Servings 8 servings

    Ingredients:
    6 cups fresh broccoli cut into bite sized pieces
    2 cups cooked white rice

    SAUCE
    3 tablespoons butter
    3/4 cup onion diced (about 1 small)
    3 tablespoons flour
    2 cups milk
    1/4 teaspoon each garlic & black pepper
    1/2 teaspoon dry mustard powder
    1/2 teaspoon paprika
    salt to taste
    3 tablespoons cream cheese
    2 cups shredded cheddar cheese divided

    Directions:
    Preheat oven to 350 degrees F.
    Cook onion and butter on medium-low heat until softened and translucent. Stir in flour, garlic powder and pepper. Cook an additional 2 minutes.
    Gradually pour in milk while whisking. Continue whisking over medium heat until thick and bubbly. Remove from heat and add dry mustard, paprika, cream cheese and 1 1/2 cups cheddar cheese. Stir until melted.
    Place broccoli in boiling water for about 2 minutes. You still want it slightly crisp as it cooks more in the oven.
    Stir together rice, broccoli and cheese sauce. Place in a greased 2 qt casserole dish. Top with remaining cheese and bake 35 minutes or until bubbly and cheese lightly browned.

      I substitute cream a chicken soup for the broccoli and add assorted parts of fried chicken.

            Oh oh oh…. I realized that this recipe doesn’t call for the mushrooms. I sauté mushrooms with the onions.

              Reminds me of a dish my mom made when I was growing up - chicken brocolli divan! This looks like a great meal! Thanks for sharing!

                My mother made the same divan after we had either chicken or turkey.and she used my uncle's curry mix.

                  Thanks, I'm going to do this today. Reminds me of my mom's, although I think she used some kind of wierdo Campbell's Cheese Soup. Still, it fits right in here. I have rice in the IP now, I usually make a pot of rice weekly, as I make fried rice a lot, but not working or eating much lately, so don't have any. I have broccoli in the freezer, and all the other stuff in fridge. Looking forward...

                    This round, I pulled broccoli from the freezer, too. And instead of cream cheese, I used Boursin. Just had the leftovers for breakfast!

                  This looks like a tasty, straightforward recipe.

                  BUT, I am not sure that a pitmistress/moderator on a BBQ site is allowed to post something cooked in an oven.
                  AND, what does "from scratch" mean? You grew both the broccoli and rice?

                    “From scratch” means you didn’t use cream of anything soup, or a box mix, etc. says me.

                  Looks wonderful! Making this tonight for Kim. She has lost nearly 30 lbs in the last six weeks. I have found every one of those buggers. 8-)>
                  She worries abt her appearance due to the up coming meatup.

                    I have some leftover chopped chicken breast that was cooked via sous vide. Might be a nice addition to the casserole to add some protein. Thanks for the recipe SheilaAnn
