    Redneck Vittles The Series: Baloney Stir Fry

    Start with ring baloney. Mine is Nemeck Brothers I get from Slovack's when we pass through West. Then bell peppers, gold taters, garlic, yellow onions, bacon grease, salt, peper, and white vinegar. Slice the ring baloney into coins, and dice the taters into stew sized pieces. Heat a skillet over medium heat while you bring a pot of salted water with a splash of white vinegar to boil. Brown the baloney in a dry skillet on both sides while you boil the taters for 10 minutes.

    While the taters are boiling, and the baloney sizzlin, cut the onion and peppers into fajita sized strips. Once the baloney is browned, remove to a plate or bowl, and add the onions and peppers along with a spoonfuls of bacon grease and a pinch of salt. Once taters are done boiling drain in a Hollander and let drip in the sink. As the peppers and onions cook down and release liquid, scrape up the fondt from the bottom of the pan, and mince the garlic. At the very end add the minced garlic and a few grinds of pepper. Cook another 2 minutes until garlic is smelling good. Remove to plate with baloney, and add 2 tablespoons of bacon grease to the skillet along with drained taters. Turn heat to medium high and get some color on those taters, tasting and adjusting salt.

      Once taters are fried up nice like, add a few grinds of pepper and add back the meat and veg. Turn off heat and continue to stir gently to mix and heat it all through. Remove from heat, and plate hot. Serve with hotsauce and beer.

        Looks great. It might work with Spam, in place of the bologna.

            I've done almost the same thing with kielbasa before and also with chorizo at times, throw in a couple eggs and some jalapenos... so many riffs possible on this theme.

                I might get thrown out, or at least put on probation, for saying this, but how about substituting tofu or tempeh for the baloney?

                  Just kidding, of course, but since tofu and tempeh are soybean products, in a meatless situation (such as camping or backpacking) beans of any kind could replace the baloney, and you would still have a complete protein, combining the beans with the potatoes.

                My mom used to make something very similar to this but with Polish sausage instead of boloney. Core memory: unlocked.
