Having moved to the Memphis area, my wife was in search of linguica. Most people and butcher shops had never heard of it. I found this recipe at Hank Shaw's website, https://honest-food.net/portuguese-linguica-sausages/. It is fabulous. Used pork shoulder and pork fat. Smoked 5 hours at 235.
