    Linguica sausages

    Having moved to the Memphis area, my wife was in search of linguica. Most people and butcher shops had never heard of it. I found this recipe at Hank Shaw's website, https://honest-food.net/portuguese-linguica-sausages/. It is fabulous. Used pork shoulder and pork fat. Smoked 5 hours at 235.Click image for larger version

      Nice. Have not made Linguiça sausage in a long time. Sounds like I need to get the grinder busy. Thanks for posting.

        Nice recipe. I'd be happy with just patty sausage with those spices.

        I like how all wild hog meat comes from boars, no sows anywhere to be found.
