Reason #14,871 to make your own BACON!

Last night I put down another 18½ lbs for a salt nap. This morning I sliced up about another 17lbs that has been sitting in the fridge since I finished smoking them Sunday.

As I'm in the kitchen, using my giant Spinnaker cutting board, wielding my 14" Dalstrong bullnose butcher knife, carefully carving neat, even slices off a 4 lb slab of home cured, home smoked bacon for packaging, my wife walks into the kitchen, looks at the scene unfolding in front of her, cocks her head a little bit to the side and says....

    "Yeah, that's pretty sexy."

As if I needed more reasons to make my own bacon??/

Being snowed in can be... a good thing.

I'm glad I didn't make bacon until after I got divorced.

    1. Significant other draining the life out of my checking account would have complained tremendously that the process was taking too long. (Did it with pastrami)
    2. Compliments, from someone who will actually accuse me of trying to blow people up with electricity and move out and take half my crap, can just be left unspoken.

As a veteran of two divorces I found all the pent up anger was only causing me digestive issues. I had to forgive and move on. Yes there are some people out there who need to stay single but not all of them. One of these days old Cupid will send another arrow your way. A good relationship is such a wonderful experience that I hope you get a chance at one.

Oak Smoke I was beyond anger years ago. I just have enough fun with it to keep me single.

Just that's I'd already thought of 14,870 reasons before this one ever even presented itself! lol. They're in chronological order of notation, not in order of importance or weight. lol

Sad that my wife never liked the home cured bacon. Or thought carving of the meats was sexy!

She felt it was not as crispy as the store bought. Kids and I loved it, but since I quit paying to go to Costco, I lost access to pork belly, so it's a moot point anyway.
