    Secret Rub #8

    I initially started out on a journey to replicate the original Stubbs Rub but, as many journeys do, I ended up at a different destination. As the name implies, there were seven attempts prior to this one. This recipe follows Meathead's guidance of using a dry brine in advance and omitting salt in the rub itself. I hope you'll find it to your liking


    2 Tbsp brown sugar
    2 Tbsp paprika
    2 Tbsp chili powder
    1 Tbsp ground bay leaf
    1 Tbsp garlic powder
    1 Tbsp onion powder
    1 Tbsp ground thyme
    1 Tbsp black pepper

        interesting. haven't tried using herbs on anything but poultry. you have a particular meat you think this this best suited for?

          I have used this on tri-tip (conventional and trisket), pork ribs, and shrimp

        What is trip-tip? Do you mean tri-tip? And what is conventional and trisket? What is going on up there in the tie-dye state?

          Totally OT, but I lived in La Crescenta back in the early 70's. Judging by Google Maps, it's changed a little.

          btuckertx - I moved here in '97. Raised a family here. Son played CV Little League and LC Gladiators, girls played softball and cheerleading. Great little town to raise a family. It has changed very little in my 27 years here. Rockhaven is still here, closed, but still standing. The city bought it and still have plans for some type of renovation. I live off of Ramsdell, just down the street from CV High.

                Welcome. All the flavor from that much ground bay leaf and ground thyme might strike an interesting balance.

                  Sounds good! I may try this just because the bay leaf and thyme would give me a good excuse to break out my new mortar and pestle that I have only seasoned and never actually used.

                    I use a cheapo coffee grinder for both though you can buy ground thyme. I haven’t seen ground bay leaf but I’m sure *somebody* sells it
