    The Magnificent 7 Pepper Blend. 1/6th scale should make close to 1 lb.

    Continuing on with my possibly idiotic WTF thinking. Posting here my mix for the original and flagship blend, The Magnificent 7 Pepper Blend. The sharp minded will note that it contains black pepper as well as 7 types of chile peppers. Oh well. 1/6th scale, pardon me for not converting to standard measure, but there's seventeen or so ingredients. Please let me know if there is anyone nutty enough to actually reproduce this stuff. There was originally something like 21 or so ingredients, but I gave up on finding things like crushed (powdered) egyptian limes and dried green mango powder in any quantity. Yes, it was better. I have done some rounding as while you might have a kitchen scale that will do grams, it probably doesn't have two digits of decimal precision. If you don't know how ridiculous that is, a gram is 28.3495 parts of an ounce. Yeah so I can measure to a 28.00th of an ounce. This proves that, without question, I am a complete idiot. Just ask my brother...

    55 g #14 black pepper
    55 g kosher salt
    55 g cumin seed Powder
    33 g garlic Granules
    33 g onion Granules
    ​
    25 g coriander
    25 g ginger ground
    60 g lime juice powder
    25 g ancho chile powder
    16 g new mexican red chile
    16 g smoked sweet paprika
    16 g gochugaru pepper flakes
    16 g chile de arbol
    16 g guajillo chile
    16 g pasilla chile
    16 g oregano Mexican Leaf
    16 g celery seed
    05 g citric acid

    No harm was done to Steve McQueen or Yul Brynner in the making of this rub.

    All of the chiles, cumin, coriander, garlic, onion and oregano was sourced from The Chile Guy in Bernallilo, New Mexico.
    I get the rest of my stuff from Oregon Spices and Spice Jungle.

    Thanks, this looks like a really flavorful recipe. If you have any Indian grocery stores in your area you can get ground mango there - its called Amchur. You might be able to get their wholesaler's info from them to save $$

    Thanks for posting ... and no need to apologize for doing things (accurately and precisely) by weight. There are a more than a few around here (those who also bake, mostly) who are quite used to ... and fond of ... measuring by weight.

    No need to apologize for your scale either ... I hear that some of us (possibly including myself ) also just might have scales that can measure down to 0.01 g ... or so.

            I love the flavor of most peppers but I am not a fan of heat. Are any of the peppers in your recipe of the β€œhot” variety??

              Well, not the smoked paprika. Negra pasilla is also pretty mild. Stay away from chile de arbol.
