    “JCBBQ Summer” my first foray into the rub game.

    Might need to rethink that name…😜

    Ill work on it but this is what I started with and I’ve gotta say it was pretty good. No salt. I tried to evoke summer flavors, hence the lemon, fennel and sumac. Definitely need to play w the ratios though.

    Why no salt? It does things that nothing else can and fades in to the background if you get it on early.

    It does look tasty.

      TxF I add the salt separately. I like to control the amount I put on. Like Meathead's rubs. I like his strategy.

      I generally dry brine separately from seasoning, so I don't want to add more salt via a rub after I've already applied a carefully measured amount in the brining process.

      Me four! I mix up all rubs salt-free so that I can control the salt separately. The article that gboss linked to explains it all very clearly.

          Yeah the red pepper flakes didn’t do much. Probably go w Aleppo next time…if I have any. 😬
