    Pork Souvlaki Greek style

    Greek style Pork Souvlaki in homemade pitabreads..


    Marinade for the pork tenderloins;
    Three sprigs of rosemary (just the leafs)
    Some thyme-leafs
    2 cloves of garlic chopped
    Olive oil 5 tbs ish
    2 cloves of garlic
    White wine vinegar 5tbs ish
    Salt/pepper to taste
    Method;
    Slice the pork tenderoins in 2" slices an put in a bowl
    add chopped thyme/rosemary/garlic
    add olive oil and white wine vinegar
    adjust with salt/pepper
    Mix well.. and let it marinate for minimum of 20 minutes..
    Thread on squwers..
    Grill until done.
    Mount the souvlakis in pitas and add tomatoes and Tzatziki.
    Wrap and eat..
    Enjoy!!

    Greek style pitabread recepie;

    Ingredients
    • 2 teaspoons active dry yeast
    • 1 teaspoon sugar
    • 160 ml milk, at room temperature
    • 80 ml water, at room temperature
    • 320 g strong flour
    • 1 teaspoon coarse salt
    • 1 teaspoon of chopped fresh thyme leaves, finely chopped
    • 1 tablespoon olive oil + extra for brushing

    Method
    These homemade pita bread are usually served with Greek souvlaki! They are soft, puffy and a little more bread like than other middle eastern/Arabic types of pitas.
    • Combine the sugar, yeast, water and milk in a bowl. Set the bowl aside for 5 minutes, until the mixture starts to froth.
    • In another bowl, combine the flour, the salt and the chopped fresh thyme leaves and give it a mix to combine.
    • Add the oil to the yeast mixture and stir to combine.
    • Add the yeast mixture to the flour mixture in batches. Make sure each batch is incorporated before adding the next.
    • Transfer mixture to a lightly floured working surface. Knead for 4-5 minutes until the dough becomes smooth.
    • Brush a bowl with some oil and add the dough.
    • Cover with a towel and let it rest for about 40 minutes, until it rises and doubles in size.
    • Place a pan over medium heat.
    • Press on the dough to remove the air and cut into 6 equal sized pieces.
    • Place pieces of dough on a lightly oiled working surface. Use a rolling pin to roll out each piece of dough to a circle 20 cm in diameter.
    • Cook the pita bread for 1-2 minutes on each side in the pan, until they puff up slightly.
    • Transfer to a plate and serve with chicken or pork gyro, sausages or vegetables. Sprinkle with chopped thyme.

      Looks great. I have been doing them with pork for some years now. The chicken breast didn't have a lot of flavor so I thought why not try pork? We loved it. Guess I am not a madman then.

    Do you have an interesting recipe for tzatiki? Do you put mint in yours?

    I haven't had souvlaki on a pita in almost twenty years--since I was last in Crete! Wow, it looks wonderful. Plenty of memories! Gonna have to add this on my list. Thanks!

    Jumping on this old post with a few questions

    We just got back from Greece, and souvlaki has been on my mind.

    One of the places we ate in Athens had won awards for best souvlaki in Athens. It was Elvis themed. It was weird, but awesome. Talking with the owner, he said his pork souvlaki was made from pig necks bc they were juicier. We also had some minor language barrier issues.

    Was wondering if
    1) assuming he meant actual neck meat, where could I even buy that?
    2) jowls arent really the neck, but would those grill well?
    3) what other pork cuts would be decently marbled, but grill in chunks well??


    Also -
    I took a cooking class from this Greek grandma that used to run a restaurant in Santorini. She was fantastic!!!
    I have recipes for
    1) meatballs with sauce
    2) tzatizki
    3) fava
    4) stuffed eggplant

    And got permission to share. I can post, if people are interested.
